Lactase is a hydrolytic enzyme produced by fermentation of a selected strain of Aspergillus oryzae. Lactase is used primarily in dietary supplements, it hydrolyses lactose into its constituent monosaccharides, glucose and galactose which are easily digested, and this assists people who have difficulties digesting lactose to consume dairy products. Lactase LA100 is used in the production of Lactose free milk and whey hydrolysates. Lactose has a poor solubility; conversion of lactose to glucose and galactose results in an increase in sweetness and solubility is increased 3 to 4 folds. The key features of LactaseLA100 include its high purity, low viscosity, ability to perform at low temperatures and high stability (at least 2 years of shelf life).
