Betaine consists of a glycine molecule with three additional methyl groups added to it. It is recovered and purified from the aqueous ;liquor remaining from the production of sucrose from sugar beets. This is a white crystalline, hygroscopic powder and can be used as a source of betaine or as a flavouring agent.
