Bromelain is a proteolytic enzyme derived from the pineapple plant Ananas comosus. Per gram, this product contains 3000 gelatine digestion units. It is produced as a white to light tan amorphous powder that is soluble in water but practically insoluble in alcohol chloroform and ether.
