Isomaltulose is produced by immobilized enzymatic reaction using a selective strain of Protaminobacter rubrum, which is able to rearrange the bond between the glucose and fructose part of sucrose resulting in new carbohydrate, Isomaltulose. This is a white or colourless, crystalline powder that is soluble in water.
