Alpha-galactosidase is a hydrolytic enzyme produced by fermentation of a selected strain of Aspergillus niger. Alpha-Galactosidase hydrolysis the terminal, non-reducing alpha-D-galactose residues in alpha—D-galactosides including galactose oligosaccharides, galactomannans and galactolipids.
